" Mango bundt cake "

Its pouring mangoes! One can’t get enough of it. Isn’t it true? There are several varieties of mangoes and each variety of mango has a distinct flavour and fragrance. I just love the flavour of mangoes and want to use it everywhere whether it is cookies or cake. So here’s the Mango bundt cake. After mango-shake this is my second mango flavour recipe. I’ve adapted this recipe from spicy-aroma.com

Ingredients

All purpose flour – 2 cup (but I think I should put 1 ½ cup)

Butter – 1/3 cup

Mango pulp – 1 cup

Eggs – 3

Sugar – 1 cup

Baking powder – 1 tsp

Baking soda – ½ tsp

Milk – ½ cup

Salt – ¼ tsp (if using unsalted butter)

Mango essence – 1 tsp (optional)

Method

1. Pre-heat oven at 180 degree Celsius.

2. Sift flour, baking powder, baking soda and salt together and keep aside.

3. Beat the eggs in a bowl for 4-5 minutes. Add in butter and sugar and beat until uniformly mix.

4. Now add in dry ingredients and fold gently. Add in mango pulp and milk.

5. Grease a bundt pan and pour over the mixture (I put some into muffin tray also) and bake around 30-35 minutes or until the toothpick comes out clean.

So here’s another mango delight for you to enjoy with family and friends this mango season :).

Enjoy!
