" Sunday Potluck and Paneer Tikka "



I need no excuse for cooking:). So when we planned for potluck I was fully charged to make few things. Paneer tikka was one of them. If you are on diet paneer tikka will be good and healthy snack option for you as it doesn’t required oil more than a tbsp. It is very tasty and can be enjoyed anytime with friends and family. All you need is a grill arrangement. But if it’s not there you can do this on a pan with very less oil. For this recipe you need to marinade Paneer and vegetables for minimum half hour but somehow I feel the more is better, so I left them overnight.

Ingredients


Paneer (Cottage cheese) - 200 gms

Vegetables – I used capsicum and onion, you can use tomatoes as well

Hung curd – 200 gms

Ginger garlic Paste – 1 tsp

Salt – as per taste

Sugar – ¼ tsp

Red chilli powder – ½ tsp

Garam masala powder – ¼ tsp

Dhaniya powder – ¼ tsp

Turmeric powder – ¼ tsp

Oil – 1 tbsp (optional)

Wooden skewers soaked in water so that they don’t get burnt while grilling.

Method


1. In a bowl, mix hung curd, ginger- garlic paste, salt, sugar, red chilli powder, garam masala powder, dhaniya powder, turmeric powder and oil.

2. Cut the paneer and vegetables in 2 inch size pieces.

3. Now divide this mixture into two bowls and in one marinade paneer and in the second one mix the diced vegetables and let them rest for minimum half hour but I’ll recommend you should marinade them for at least 3-4 hours. In my case I left them overnight.

4. Next day this is ready to grill on a pan or a griller. Arrange them on the skewers as depicted in the photograph.

5. Now heat a heavy bottomed pan. Put 1 tbsp oil and grill on that from all the sides. Same thing you can do on a charcoal grill.

Paneer tikka is ready and you can enjoy it with your choice of dips. I used Mint chutney (sauce).
