" Apricot Preserve "


Well I made this preserve or chutney long back in apricot season. Apricots are local fruits here in Joshimath and they look so beautiful. It has a bright yellow colour and velvety texture. 

Trees laden with apricots look so beautiful and if you get home grown, fresh apricots then you can surely try this. Ok, that doesn’t mean you can’t use store bought. I added chilli powder too to add a twist in regular preserve. Now a days I’m comfortable in making preserves. Like orange jam I made strawberry compote too. But that’s next recipe coming on this place. Well, coming back to apricot preserve this wonderful homemade preserve can be used as cake topping or one can eat just like that. you can enjoy even with your parathe and breads.

Ingredients


Ripe apricots - 500 gms

Granulated sugar – 200 gms (adjust as per requirement)

Red chilli flakes – 1 tbsp

Method


1. Remove the seeds from the apricots and coarsely chop them.

2. Now in a heavy bottomed pan, on medium heat place the chopped apricots.




3. Add sugar and chilli flakes and cook until the apricots have completely softened and have a jam like consistency. Stir frequently to avoid any burning or sticking to the bottom of pan.

4. Now do a small test, pour the preserve on the back side of a spoon if it coats the spoon then it is done.

5. Let the preserve cool down completely and then store it in sterilised jar.

This preserve is ready for you to enjoy with your favourite bread. Isn’t it easy!
